Seafood potato Stew

* ¼ cup olive oil
* 1 onion, diced
* 1 carrot, diced
* 3 garlic cloves, minced
* 1 Tablespoon tomato paste
* 2 medium tomatoes, diced
* 1 lb. petite potatoes, halved
* 2 (15 oz.) cans seafood stock
* ½ lb. halibut, diced in 1 inch pieces
* ½ lb. uncooked shrimp, peeled and deveined
* ¼ cup chopped parsley
* ½ teaspoon oregano
* ¼ teaspoon red pepper flakes
* ¾ teaspoon salt

1. Heat the oil in a large pot over medium/high heat. Add the onion, carrot, and a pinch of salt and pepper. Cook for 3-5 minutes until veggies begin to soften.
2. Add the garlic, tomato paste and tomatoes and cook for 5 more minutes.
3. Add the potatoes and stock and bring to a boil, then reduce heat to low and simmer for 5 minutes.
4. Add the halibut and let simmer for 5 minutes. Then add the shrimp, parsley, oregano, red pepper flakes and salt. Cook for 3-5 more minutes until shrimp is pink and cooked through. Serve immediately!

That's a nice looking recipe. We recently made Portuguese fisherman's soup. Very much like your's with some more tomatoes and some more tomato paste. Real tasty with some garlic bread

As a kid we also ate hake or steak fish as it was called had a single round bone in the middle I remember it was like 10 cents a lb but that was over 50 yrs ago hahaha

Halibut is the closest thing to steak that swims. Great fish for any dish. I used to work at Fishermen's Terminal in Seattle while going to forestry school at UW.

Nice recipe. It could be made without the tomato paste and tomatoes for a white stew.

You can add whatever you like shrimp scallops etc you don’t have to use fish

I'm sure my DH would love this, but I'm not a fan of fish in stew. This one is a "MAYBE".
