Boil in a ziplock omelet

Start a large pot of boiling water. Take 3 eggs in a ziplock and break up. Mix cooked bacon or other meat. Mix spinach and peppers and onions and any other wonderful ingredients all together. place the ziplock full everything in boiling water for approx 10-15 minutes or until the eggs/omelet is cooked your way. Once done, open ziplock and dump on plate.
Easy way to do an omelet.

I always use real bacon bits or pieces instead of frying up bacon - so much easier.

Real score at Costco. Real Bacon bits. Its a huge bag and since there are only two of us, I freeze half, but so much easier than cooking bacon for salads and omelets, and when you only need chopped bacon.

side note, disposable foil muffin tins are great for cooling eggs on the fire (or grill) We did this last week, both scrambled and intact. will be a regular for us from now on. Dollar store foil pans and now muffin tins are major time saver for us and now always in stock in my camper.

Just make sure you use Ziploc bags and not something cheap from the Dollar Store!

Have done this at a couple rallies. Just set the ingredients out like a buffet, and everyone adds to the eggs what suits their fancy(cheese, peppers, mushrooms, bacon or whatever), then add to the eggs in the ziplock bags then squish it around for a minute and put it into the boiling water. SO EASY!! and minimal mess. Always a hit for breakfast. Gary

This would be a good method when boondocking to cut power use, but still have a hot meal.
